Amino acids have an acidic (COOH) and a basic (NH2) group attached to it. Therefore, amino acids have an acid-base nature. On dissolving an amino acid in water(neutral ph=7), a zwitterion/dipolar ion is formed. In this process, the Hydrogen from COOH is transferred to NH2. This makes one end of the amino acid negatively charged and the other end positively charged, with no overall charge. The amino acid is now polar and is more soluble in water. This reaction is a reversible reaction.
