The foil keeps the potatoes hot after being removed from the oven. Radiation from the potatoes is reflected back to them. Also, the plate and air don't make direct contact with the potato skin, which decreases heat loss due to conduction. The foil also holds in steam, which keeps the potatoes warm and moist.
