Chapter 6 - Cell Membranes - 6.1 - Biological Membranes Are Lipid-Protein Bilayers - 6.1 Recap - Learning Outcomes - Page 115: 2

Answer

Phospholipids have a hydrophilic head that is attracted to water and hydrophobic tails that try to avoid water. Since the cell membrane is a bilayer, the phospholipids are oriented with heads facing either side of the membrane and tails in the interior. This ensures that the polar heads are exposed to water and the non polar tails are hidden away.
