How would Joey’s life have been different if he didn’t have to go to war?

If Joey hadn't gone to war, he would likely have accomodated himself to becoming a plow horse for Albert, or he may possibly have been sold to a wealthy landowner..... he was a beautiful horse. Either way, he would have lived a life of comfort and safety, rather than a life of danger...... never knowing what was to come.
