How does the man know it is colder than -50 degrees? Who is the old timer?

The man's "spittle" (spit) freezes before it hits the ground. The old-timer at Sulphur Creek had warned the man not to travel alone when the temperature was so cold (below -50). He also told him to make camp should he be caught in such cold.
