After the fish has been mutilated by the sharks, Santiago feels a tremendous amount of guilt. He apologizes to the fish for their circumstances, undertsanding that his pride led him too far out into the sea, and his desire to be seen as a man led him to hook a fish he couldn't carry back to port.
