I might have the kids do a journal. You can fill it with images, poetry, narrative.....Old man and the sea has so many levels and allusions that you can create something truly remarkable. Consider matching Santiago's words to Bible verses (there are many allusions) or other literary works. If you are a good artist or photographer consider adding pictures. Haikus would work well too!
