I think this makes sense. Gregor's metamorphosis is both physical and emotional. I wouldn't say Gregor totally loses his "humanity" rather than Kafka asks us to consider what humanity is in the first place. Gregor's family certainly forsakes him as he turns into a bug. Do they represent humanity?
