Explain the significance of moon letters. What do Bilbo and the dwarves learn?

Because of the moon-letters, the group is able to ascertain (by riddle), the key to accessing the door that the key will open.

"Stand by the grey stone when the thrush knocks," read Elrond, "and the setting sun with the last light of Durin's Day will shine upon the key-hole."
