What gaps/silences - from any character besides Nick - could I use to write a short story?

In english this term, we have to choose a gap or silence from any character besides Nick and write a short story from their perspective. e.g. SPOILER ALERT the time after Myrtles death and Daisy and Tom running away. There are many parts/character perspectives to choose from and I was wandering if there are any parts which would be particularly simple or creatvie? The only limitaions is that the story can't change the original plot and it can't take place before or after the novel, it needs to work with the story. Lol i have no idea what im asking ... basically, any reccommendations on parts to do? Thank you!!

I might consider The gap inbetween Myrtle getting run over and George killing Gatsby in the pool.
