I suppose on the surface is symbolizes death and foreshadows a battle. I think, more importantly, it represents that Santiago is capable of interpreting and understanding the soul of the world and hence the universal language of the world. The reading of omens in the natural world gives Santiago a special status reserved for men much more older and learned than he is.
