Why does Candy stand up to Curley's wife, and what response does he get?

I am guesing that you mean he stands up to Curley's wife when she continues to bother him and the other men in Crook's quarters.  When he threatens to tell Curley about her "ways," she basically threatens to have him punished; the implication is clear that she would have him lynched.
