How does this quote show that softness eventually gets destroyed in OM&M?

I'm not sure what you mean by "softness". Do you mean Curley's wife? Lennie likes soft things but doesn't have impulse control or context about what he is petting. He likely inadvertently kills what he pets because he lacks the intelligence to understand his own strength and emotions.
