What were non-Jews risking by hiding Jews? Why would they choose to hide them anyway?

Non-Jews risked their lives by hiding Jews. Those who did hide Jews, did so because they knew what was happening was an atrocity. Many people were not aware of what the Nazis were doing, or they simply chose not to see or acknowledge what was transpiring right under their noses. Others, took the high road and put themselves in jeopardy simply because it was the right thing to do.
