The floating dagger which Macbeth speaks symbolizes the guilt the Macbeth feels about the idea of murdering Duncan ?

I would agree with this statement. At the time of the floating dagger scene, Macbeth was having misgivings about killing Duncan who has recently showered him with reward and praise. Macbeth knows he is making a terrible sin against God and he thinks his treason will not go unpunished.
