First, above all else keep in mind that the big unidentified creature whom Sam-I-Am is constantly pestering never says he does not like eggs and ham, only that he does not like eggs and ham that are colored green. Since he admits to enjoying the green and ham by the end, it can fairly safely be assumed that this meek fellow does like eggs and ham. It is the color which bothers him. Changing the color of food does not change the taste. It requires changing the flavoring of food to alter the taste and since the big guy with no name turns out to love eggs and ham colored green, one also fairly safely assume that the product Sam-I-Am is shilling has not had its taste changed by altering the flavoring.

In other words, the story is not really about being willing to try new things since the egg and ham that the object of Sam’s persistence finally agrees to eat is not something new at all. Merely changing the color of the food does not make it new any more than a painting your white car red would make it new or different.
