Molly told Magwitch She was going to kill there child and he would never see her again. Mr. Jaggers saved Estells in exchange for Molly's cleaning services. Thus Estella was given to Miss Havisham under the thought no-one would find out her actual socail statis.

Miss Havisham was childless and so was willing to take on Estella and raise her.  Jaggers was Miss Havisham's lawyer so he could work with Miss Havisham.
