Given the way Dickens portrays Estella, what do you think attracts Pip to her?

She's unattainable.................. and he sees something in her that most of us don't see. You have to remember that Pip knows how she was raised, and it was Pip who saw little bits and peices of who Estella could have become. It's just a matter of hope and unrequited love!

Pip finds Estella a beauty, and as you know he is a poor kid and haven't met many girls like Estella . And when Estella told him that he may kiss her if he wants to , that might have made him feel attracted to her and eventually fell in love with her.
