Why do you think Van Helsing claims there will be a difference "whether [Lucy] dies conscious or in her sleep"?

I believe the difference was in the way the people who loved her experienced her death. They were able to see her as sweet as she was and to say goodbye, and they also got a glimpse of what was to come after her death.
