Why is it understandable that they would at first trust and reject the oracle and the gods?

At times, Iocaste and Oedipus rely upon the predictions of the oracles. At other times, Iocate and Oedipus condemn oracles and even mock the gods

That would be because they have been manipulated and used as bargaining chips by God's for much of their journey.
