Carbohydrates refers to the food group consisting of starches and sugars. There are two types of carbohydrates or carbs (simple or complex). The simple carbs are composed of one sugar molecule while the complex ones are made of many sugars. All digestible simple sugars and starches eventually get converted to glucose in our body which is a main source of energy. But excess glucose eventually gets converted into fat and that's why eating too many carbohydrates can cause weight gain and limiting carbs can sometimes contribute to weight loss. Fiber on the other hand is a complex carb and the body cannot break it down so it passes through our guts undigested. Some types of fiber such as soluble fiber helps reduce appetite and thus contributes to weight loss.
