The rate of mutarotation is sufficiently high that, as the enzyme consumes beta-D-glucose, more alfha-D-glucose is converted to the beta- form and, eventually, all the glucose is oxidized. Glucose oxidase is specific for glucose and does not detect other reducing sugars (such as galactose) that react with Fehling's reagent.
