Marguerite was fascinated by her husband. When she married him, she believed him to be sweet, passinate, and devoted to her. Unfortunately, all of that changed only hours after their marriage.

no, what appealed to her about the Scarlet Pimpernel...?

The SP's bravery, daring, and cleverness appealed to Marguerite. That an Englishman would help French aristocrats with his own life at stake. What appealed to her was the adventure that was clearly a part of the SP's personality. The kindness that spurred him to the rescues, even though he got almost nothing for that.

It may also have appealed to her that he was a mystery. Mysteries are always fascinating, and the SP was both myterious and fascinating.

In short, what appealed to Marguerite about the Scarlet Pimpernel was his bravery, his daring, his cleverness, his kindness, and his mysterious persona.
