what is the symbolism of sleepy hollow?

I think food is a symbol of Ichabod's greed. The guy had a voracious appetite.He is described as "a huge feeder". He also fed on supernatural stories, money and a certain farmer's daughter. All of it adds up to greed and food seems to be a catalyst that lets us know Ichabod can't get enough of anything.
