Why is Gatsby surprised when daisy says, “ i did love him (Tom) once - but i loved you too”?

Gatsby thought that Daisy never loved Tom. Gatsby's illusion does not include Tom at all. Gatsby wants to remake the past, present, and future without Tom in the picture.
