The land turtle in chapter three represent perseverance, blind faith, and (to an extent) ignorance. It keeps struggling to cross the road even despite the struggles against traffic. It has a blind faith that it won't get squashed by traffic and an ignorance that somehow it actually won't get hit. THis of course is symbolic of the Joad's trek to California. Despite the odds they persevere into destitution. They have faith that things will get better despite setbacks at every stage. Some might call their eternal optimism ignorance.
