How does Steinbeck create a change of tone and mood between the beginning of the chapter and the end? Why does Steinbeck employ this change in tone and mood?

The chapter begins with spring in California. It's a beautiful sight of the bounty of fruit and renewal. The chapter ends with rotten fruit and rotten spirit. Because of the profit motive children must die from pellagra because the profit cannot be taken from an orange.
