I think that the colour purple refers to the small things in life that we don't notice. At one point Shrug asks Celie if she notices the beauty of life that God puts on display for us everyday, "I think it pisses God off if you walk by the color purple in a field somewhere and don’t notice it." This is a life altering moment for Celie.
