The Catcher in the Rye

what point does Holden try to make about people when he talks about Stradlater and the "commas" and Ackley's description of the basketball player?

Mainly in chapter 4

Stradlater does not think he is as good of a writer as Holden. Holden thinks adding commas in the wrong places is stupid because a good paper is about content, not commas. Ackley points out that what makes a basketball player is his build. This annoys Holden because what makes a player good is talent and skill.
