Okay I'll try to get most of them.

In addition to your above categories

The Knight - chivalry/ gallant soldier/king's army

Squire- Son to knight courtly servant

Monk and Friar/ Parson- hypocritical clergy

Merchant/Franklin-aristocracy/upper class

Clerk-poor working class (kind of like the greeter at Wal-Mart)

Sargent of the law- Lawyers

Wife of Bath- Liberated Woman? She seems to make her own money and go through men like Kleenex.
