Water's polarity makes it an excellent solvent, and the ability of water to dissolve substances is crucial for countless chemical reactions which take place in the body. Water's high heat capacity makes it resistant to temperature change, which in turn makes our bodies more resistant to temperature change because so much of our bodies are composed of water. The high heat of vaporization of water allows us to cool our bodies with sweat, which absorbs heat from both our bodies and our surroundings as it vaporizes.
