In this quote, Buck is instinctually experiencing the inherent thrill of the chase..... the hunt. Domestication teaches reliance, trust and love, but dogs often fall back on their instincts. Picture someone walking their dog and suddenly losing hold of the leash, as the dog bounds away, chasing a smaller animal or bird. This happens all the time, and the urge to do so is one of instinct. You can teach a dog commands, but you can never say, "My dog would never do that." Every dog occasionally experiences the call....... and likely, each of them will adhere...... at least once.
