The other animals education is very limited, making them easier to control. People, or in this case animals, that are educated tend to be able to see the reasoning behind decisions, and determine whether or not that reasoning is sound. If it is not, then they have the tools necessary to do something, this is not the case with the animals on the farm. The pigs have knowledge (education) and use this to impose their will and manipulate the other animals who are unabe to see that the rules being made are inherently unfair.
