What do the old man’s eyes tell about his personality?

Santiago is described in the following way, “Everything about him was old except his eyes and they were the same color as the sea and were cheerful and undefeated.” This is important because in this description we see the man..... not his physical attributes, or the physical condition of his boat, but rather who the man is. We see through to his soul.
