We don't know if Rainsford really changes his ideas on hunting. He seems to be a pretty static character. Consider his opening remarks with Whitney. He says that the "the world is made up of two classes- the hunters and the huntees. Luckily, you and I are hunters." Later in the story, Rainsford feels what it's like to be hunted:

Then he ran for his life. The hounds raised their voices as they hit the fresh scent. Rainsford knew now how an animal at bay feels.

We are unsure how much Rainford is actually changed by this.
