What is sanitation like at the slaughterhouses

The sanitation at the slaughterhouse is terrible. One evening, for example, Jurgis has the job of clearing out all the wounded or dead cattle from the train cars. Those cattle are then butchered, and the rotting meat is scattered amongst the good meat so that no one knows the difference.
