When the ski jumper is on the elevator there is high potential energy and low kinetic energy. When the ski jumper goes down the ramp, there is high kinetic energy and low potential energy.

Kinetic Energy is any object in motion. Potential Energy is determined by the location of the object. When the ski jumper is taking the elevator to the top of the mountain, his potential energy is increasing while the kinetic energy is low. As the ski jumper goes down the ramp, the energy becomes kinetic energy with little potential energy remaining.
