A chemical reaction that joins two organic molecules into a larger one and produces water as a by-product is called dehydration synthesis. The reaction is called a synthesis reaction because two smaller molecules are being combined into a larger molecule. Since water is produced as a by-product, you are removing water from the larger molecule (dehydrating it). Combine these two terms and you get dehydration synthesis.
