What do they do to test the samurai?

One example can be found in Scene One when Katsushirō swings the stick down at the new samurai, but he catches it with his hand without even looking and throws Katsushirō to the other side of the room. Kambei immediately stands and apologizes, explaining that they wanted to test his skill.
