Why does Simon untangle the parachute lines?

is there a deeper meaning to it?

Simon is Golding's Christ figure. Where the other boys perceive the pilot as the beast (from far away) Simon sees a human being at once "heroic and sick". Simon pays the man some respect. He frees him from the wind's "indignity" and lets him rest in peace.
