Explain this statement from the book: " The arrogance had always been there, but formerly it had come out in pride his work-not in the way he wore his hat and walked."

Johnny changed a bit during this period in the novel. According to the statement, he'd always been prideful, but he showed that pride in the way he did his work. Since losing his desired profession, his pride came out in the way he acted and behaved toward others.
