during chapter 1, why were the apprentices at the lapham house lucky?

They were lucky because they were able to sleep in the attic and were free to be a bit lazy because their master was too old to go up and rouse them, and their mistress was too stout (heavy). Thus, the worst admonitions they received were their mistress' bellows (a bit of yelling), rather than any type of physical abuse.
