I am opening a french market/cafe and am trying to decide the best way to display our cheese and sausage offerings. My chef wants to go with a closed display(access from rear) and I prefer an open, more accessible display. One reason is that there will be no one person at the cheese to answer questions at all times and I feel some customers would feel more apt to buy if not required to inquire. My dilemma is my gut instinct vs. his experience. Thanks much
