How have Japanese Americans in Manzanar tried to recreate a “normality, a sense of some things continuing”? Why have they done so?

They try to keep their traditions going by basket weaving and teaching traditional dance to children. Much of their Japanese identity was assaulted and stripped away by being forced into the camps. Small cultural markers kept their identities intact.
