Van Helsing hurls Arthur across the room because Lucy has crossed the line and wants his blood...... as Dracula had wanted her. Van Helsing wanted Arthur and Lucy to have the opportunity to say goodbye before Lucy died, but her transformation had already begun. That is why he instructs Arthur to simply hold her hand for comfort and nothing more.......the instinct of a vampire alreay possessed her. After Van Helsing "hurled him almost across the room," Lucy's response was noted a few lines later;

"I kept my eyes fixed on Lucy, as did Van Helsing, and we saw a spasm as of rage flit like a shadow over her face. The sharp teeth clamped together. Then her eyes closed, and she breathed heavily."
